Teaching vineyards

The Viticulture and Enology program maintains a series of vineyards designed to provide students with hands-on management experience and to produce grapes for fermentations in the enology courses.

At the Lansing farm on the East side of Cayuga Lake is a teaching vineyard planted with Riesling, Chardonnay, Cabernet Franc, Pinot gris, Pinot noir, and Lemberger.

Right on campus at Cornell Orchards are two teaching vineyards planted to hybrids. The Pool block (named in honor of Bob Pool, former Cornell viticulturist who designed the planting) contains several wine, juice, and table grapes managed using different training and pruning systems. In addition, Concord and Seyval blanc vines are planted on a yearly rotation so that students have the opportunity to train and prune vines of a variety of ages. A second block at the location is planted to Himrod, Cayuga white, Tramminette, Marechal Foch, Chancellor, and GR7.

The Vinification and Brewing Laboratory

The Vinification and Brewing Laboratory is located at the Dept. of Food Science and Technology of the New York State Agricultural Experiment Station. Its construction was enabled by a partnership of the College of Agriculture and Life Sciences, the New York State Agricultural Experiment Station, the Wine and Beer Industry, and the New York State Government. The vinification part of the facilty is mainly used for extension and research projects.

The facility allows us to expand experimental winemaking programs to test new grape varieties and winemaking practices. It also allows us to scale up experiments to industrial production volumes. It is a place for equipment manufacturers to showcase their new equipment. It is a place where industry members can train on new and current technology and equipment.
